Eight services across the chag. Strictly kosher (Cholov Yisroel · Pas Yisroel). Plated meals where it matters, finger food where it fits. Chef Zelman + Chef Alex on-site for the full program.
The standing rules for this program
Restaurant-style plated service. Each meal: max two mains, one starch, one composed salad.
All dairy is Cholov Yisroel. All bread is Pas Yisroel.
All meat sourced from Aaron's Gourmet Kosher (Queens).
Salads are oil-based composed styles only — Green Goddess, cranberry, shaved kale. No chopped-vegetable salads, no mayo, no Israeli-style, no peppers.
House dips (tomato · baba ganoush · olive · garlic) at the sit-down dinners only — one large prep carried through Thursday, Friday, and Saturday meals.
Fish is never topped — grilled, pan-seared, or poached.
High-end meats cooked to medium. Plated, never heaped.
Desserts are kitchen-made fresh where the format allows; specialty pieces (Napoleon, Dubai chocolate) ordered from preferred bakery vendors. No store-bought desserts.
Pizza is mushroom + tomato for adults; plain cheese for the kids.
No spicy.
